The Gault&Millau 2026 Ceremony marked a historic turning point for Slovenia's gastronomic scene. For the first time, the supreme distinction of 5 toques has been awarded to a restaurant in the country. A look back at an exceptional evening and the complete rankings.
Hiša Franko: Slovenia's first restaurant with 5 Gault&Millau toques
It's Hiša Franko, the restaurant of Ana Roš in Kobarid, in the Soča Valley, that makes history. Already crowned world's best female chef in 2017, Ana Roš sees her restaurant earn the 5 Gault&Millau toques — an absolute first in Slovenia. This distinction places Hiša Franko at the pinnacle of European gastronomy, alongside the continent's greatest tables.

Why Slovenia Is an Essential Food Destination
With only 2 million inhabitants, Slovenia boasts a remarkable density of outstanding restaurants. The Gault&Millau 2026 guide now lists 1 five-toque restaurant, 14 four-toque restaurants and 37 three-toque restaurants. This gastronomic wealth rests on a shared philosophy: local produce, short supply chains and deep respect for the terroirs — from the Julian Alps to the Karst, from the Soča Valley to the Adriatic coast.
Slovenian cuisine draws on Italian, Austrian and Balkan influences to create a unique culinary identity. This year's award-winning chefs embody that diversity: Jure Tomič reinvents Posavje cuisine in Brežice, Martina Breznik elevates alpine tradition in Luče, and Ana Roš keeps pushing the boundaries of creative gastronomy in the Soča Valley.
Planning a Food Trip to Slovenia
Slovenia lends itself perfectly to a gastronomic road trip. In just a few days you can string together award-winning tables in exceptional natural settings. From Ljubljana (JB Restavracija, Restavracija Strelec, Restavracija Cubo, Gostilna As, Restavracija COB) to the Soča Valley (Hiša Franko, Danilo – gostilna & vinoteka) via the Karst (Gostilna Mahorčič) and the coast (Bistro Štorja, Restavracija Hotela Marina), each region offers a distinct culinary experience.
